Granite can withstand extremely high temperatures and is very
difficult to scratch. It takes something like diamond, carbide, or
another piece of granite to scratch most granites. Because of its
extreme hardness it makes a poor surface to cut on because it dulls
knives so quickly. Granite is, however, a perfect surface for preparation
of pastries as good cooks will attest to.
